Honey Wheat Pancakes

If you’re like me you’re constantly trying to eat healthier…and constantly failing to do so. About every month or so I get this earth-shattering realization that junk food is bad for me and I need to start eating healthier and working out more…and this lasts for about a week or so before I slowly fall into bad habits again. But the good thing is that no matter how many times I fail at my healthy-eating regimen I always tell myself that I can do it again. You may fall hard but picking yourself up is what counts. Anyways, end of semi-inspirational/motivational talk. Let’s talk food.

Pancakes are one of my favorite breakfast foods. Actually all breakfast foods are my favorite foods, but then again I love food, period. Back to the pancakes.

The first time I had these honey wheat pancakes was when my sister brought them home from her Home Ec class. They had made pancakes that day and when she told me they were honey wheat I wasn’t exactly enthralled until she offered me a bite and it was the most softest pancake ever!

Now this was a long time ago, but I just never got to posting it until now. I try to publish new blog posts every Monday, but my university starts this Monday (boo) and I probably won’t have time to post then so I’m going to move my blog posts back to Sundays/Saturdays/Fridays. Now, I don’t particularly like Sundays. In fact, if I have to be completely honest, I sort of hate Sundays more than Mondays. Why, you ask? Because Sundays are filled with the gloom of the impending Monday. When it’s Monday, you really can’t do anything about it- you just have to get through it…but on Sundays you get that knot in your stomach knowing that Monday looms ahead, and you can’t do anything about it- you sort of wish Monday would come and get it over with, but you also wish you never had to deal with Monday. Anyways, I hope these pancakes help you deal with any Sunday/Monday blues!

On a more positive note, even though I’m not looking forward to waking up earlier, getting stuck in traffic during my commute, and papers/projects/exams to deal with, I am excited for a new semester! I’m taking some pretty interesting sociology classes as well as a history class that I’m also really looking forward too! The only class I’m not exactly thrilled about is statistics. I’ve taken calculus in high school and I actually kind of liked it, but I have never really enjoyed statistics. So we’ll see how this goes!

Honey Wheat Pancake Recipe
yields 6-8 medium pancakes
Ingredients:

  • ¾ cup all-purpose flour
  • ¼ cup whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • 1 cup low-fat milk
  • 2 tbsp vegetable oil
  • 2 tbsp honey

Directions:

  1. Combine dry ingredients in a large bowl
  2. Beat egg with whisk until fluffy. Add to the dry ingredients.
  3. Add milk, vegetable oil, and honey to dry ingredients in exactly that order.
  4. Mix until batter has no lumps.
  5. Oil and heat skillet on medium heat. Ladle 1/4 cup batter into skillet. Watch pancakes carefully as they cook fast. Flip when the bottom side is browned. Cook the other side and remove.
  6. Serve with syrup, honey, or jam and enjoy!

  1. Do not beat yourself up girl, we all fall back 🙂 and as you've just said we have to get up again. My kids love pancakes very much and your version seems like a healthier alternative than store bought mixes … really worth trying.
